Chickpea Farro Salad with a Golden Turmeric Dijon Dressing Recipe

This dressing is delicious and pairs with many food combinations. This is just one example of what you can make with it. To build one bowl:

  • 2-3 cups mixed greens
  • ½ cup-1 cup pre-cooked farro
  • ½ cup roasted chickpeas
  • 1-2 Tb raisins
  • ¼ cup fresh blueberries
  • 2 Tb pumpkin seeds
  • Top with the Golden Turmeric Dijon dressing, recipe below

The dressing recipe contains a few ‘functional ingredients’ so to speak, offering health benefits.

  1. Mustard is great to pair with cruciferous vegetables because it activates a cancer fighting compound found in this family of foods, sulforaphane.
  2. Turmeric offers anti-inflammatory benefits and when consumed with black pepper and fat, the absorption is significantly enhanced.
  3. Miso is fermented so it provides some probiotics, beneficial for gut health.

Golden Turmeric Dijon Dressing

  • 2 garlic cloves
  • 1 tsp turmeric
  • 3 Tb blanched almonds
  • 1 Tb Dijon mustard
  • 3 Tb nutritional yeast
  • 1 Tb white miso paste
  • 3 Tb lemon juice
  • 2 tsp maple syrup or honey
  • Dash of salt
  • 1/3 cup water

To make: blend together all ingredients until smooth. Taste, and add salt or additional sweetener as needed.
