This dressing is delicious and pairs with many food combinations. This is just one example of what you can make with it. To build one bowl:
- 2-3 cups mixed greens
- ½ cup-1 cup pre-cooked farro
- ½ cup roasted chickpeas
- 1-2 Tb raisins
- ¼ cup fresh blueberries
- 2 Tb pumpkin seeds
- Top with the Golden Turmeric Dijon dressing, recipe below
The dressing recipe contains a few ‘functional ingredients’ so to speak, offering health benefits.
- Mustard is great to pair with cruciferous vegetables because it activates a cancer fighting compound found in this family of foods, sulforaphane.
- Turmeric offers anti-inflammatory benefits and when consumed with black pepper and fat, the absorption is significantly enhanced.
- Miso is fermented so it provides some probiotics, beneficial for gut health.
Golden Turmeric Dijon Dressing
- 2 garlic cloves
- 1 tsp turmeric
- 3 Tb blanched almonds
- 1 Tb Dijon mustard
- 3 Tb nutritional yeast
- 1 Tb white miso paste
- 3 Tb lemon juice
- 2 tsp maple syrup or honey
- Dash of salt
- 1/3 cup water
To make: blend together all ingredients until smooth. Taste, and add salt or additional sweetener as needed.
